In a large pan pour extra virgin olive oil until it covers the bottom of the pan . Once you get the proper temperature add a large thinly sliced onion or 2 – and 1-2 cloves of garlic , whole, not chopped , just to give flavor to the food . Saute for 1-2 minutes, having already added 3-4 pinches of sea salt and fresly ground pepper ( if you have stomach problems boil the onion in water for at least 20 minutes before frying it in the oil) . Then add 1/2 pound or 1 pound – minced meat, depending on the number of people who will eat. After the minced meat becomes light brown, stop stirring and add two freshly cut tomatoes or a package of tomato juice and 1 or 2 bay leaves , depending on their size. After the chopped tomato boils for 10 min.- if you want-pour in the pan half glass of red wine and leave it boiling for 5-10 minutes before eating for the alcohol to be evaporated. When the minced meat is ready, we remove the bay leaves.
